People talk about Salesforce as a CRM, but really it's an object database and application platform with a web GUI.
You can create your own object types, build your own fields and validation rules and adjust the form layouts on screen, and when you get to the limits of that you can write business logic in their own programming language (Apex) and database query language (SOQL). And there's a marketplace where you can buy in third-party apps and link them to your data.
The "CRM" part is really just the default set of objects they give you (accounts, contacts, opportunities, products, quotes, orders etc)
